Baked Berry Oats

These baked berry oats have been popping up everywhere lately so I thought I’d try it myself, and they are absolutely delicious! They are so comforting for the cooler months when you want something warm and sweet to get you out of bed, and you can enjoy them guilt free - the only sweetener is a tiny bit of honey, and it tastes perfectly good without it!

I’ve included blueberries and strawberries in my baked berry oats because that’s what I have in the fridge at the moment, but you could use raspberries, blackberries, apple, peanut butter, or even banana with chocolate chips!

You could even try preparing it the night before and just popping it in the oven in the morning while you have a shower - just keep in mind you might have to cook it for a few minutes longer if you've kept it in the fridge!

Ingredients:

  • 1/2 cup oat flour (blend rolled oats until fine)

  • 1/3 cup milk of choice

  • 1/3 cup mashed banana (ripe bananas are easier to mash)

  • 1/2 tbsp honey

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • Chopped pecans

  • 2/3 cup mixed berries (I used strawberries and blueberries), fresh or frozen

  • 1 tbsp chia seeds

  • Dash of fresh lemon juice

Method:

  1. Preheat oven to 180 degrees celsius

  2. Add blended oat flour, milk, banana, honey, baking powder, cinnamon, and salt to a bowl and mix well

  3. If you’re using frozen berries heat them up until warm and juicy. Mash berries a little with a fork so they release their juices, then mix in chia seeds and lemon juice

  4. Put a thin layer of the oat mix on the bottom of an oven-safe ramekin, then place berry mix in the centre and top with the remaining oat mix. I like to make it so there is a juicy berry centre surrounded by the oat mix on all sides

  5. Place extra berries and the pecans on top, pushing them down slightly so they are embedded in the surface. Add to oven and bake for 25 minutes, and enjoy!
