Homemade Granola

This homemade granola recipe tastes absolutely delicious and reminds me of Christmas! The combination of nuts, seeds, and warming spices makes it the perfect cosy breakfast for you to start your day with.

I find granola is best served with fresh fruit and yoghurt to give it that delicious crunch. I find that this recipe makes my granola stick together in clumps - I don’t know why it’s better when it’s clumpy but it just is!

Ingredients:

  • 4 cups gluten free oats

  • 1 cup nuts (I use pecans or walnuts)

  • 1/2 cup seeds (I use sunflower and pumpkin seeds)

  • 2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp ginger (optional)

  • 1 tsp coarse salt, or 1/2 tsp table salt

  • 2 tbsp orange rind (optional)

  • 1 tsp vanilla essence

  • 1/2 cup melted coconut oil

  • 1/3 cup honey

Method:

  1. Preheat oven to 175 degrees celsius

  2. Melt coconut oil in the microwave or on the stove

  3. Meanwhile mix oats, spices, salt, nuts, and seeds in a mixing bowl

  4. Add coconut oil, honey, and vanilla essence to the mixing bowl, stirring until well coated

  5. Add ingredients to baking tray lined with baking paper, pressing down to form an even layer so that it’s about 1-2cm thick. Press down with a spoon or spatula to make the ingredients stick together

  6. Cook for 20-25 minutes, stirring halfway. Make sure to press down again so that the granola sticks together to form clumps!
