Strawberry Chia Seed Pudding

I find that chia seeds are the absolute BEST when it comes to healthy bathroom habits, I honestly just feel like it’s a spring clean for my insides - I know that’s probably not what you’re wanting to hear on a recipe page but I felt that as a nutritionist I had to put it out there.

It’s absolutely packed with fibre that’s great for your gut and full of antioxidants and probiotics, your gut will love this strawberry chia seed pudding.

The texture is gorgeously soft and creamy, and paired with the crunch of the chia seeds makes for a lovely texture. You can even try topping it with some fresh fruit or my homemade granola recipe.

Tip: try substituting the Greek yoghurt for coconut if you’re vegan or dairy intolerant.

Ingredients:

  • 1 3/4 cups strawberries (or berries of choice)

  • 1 cup milk of choice

  • 1/2 cup chia seeds

  • 1 tbsp maple syrup (or honey)

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • Greek yoghurt, to serve

  • Extra toppings to serve, like nuts and seeds, berries, or my homemade granola

Method:

  1. Blend the strawberries and milk together in your blender

  2. Stir in chia, maple syrup, vanilla, and cinnamon, and leave overnight in the fridge

  3. Serve for breakfast with toppings and enjoy!
